Sweet Potatoes with Smoked Paprika

Regular potatoes are bad for diabetics; sweet potatoes have a much lower glycemic index and are much better. This is a very simple and tasty recipe.

Directions

Slice 3-4 medium sized sweet potatoes into about 1/8 inch slices.

Slice 2 medium onions into about 1/4 inch rings

In a bowl, thoroughly mix about 1/4 to 1/2 cup olive oil with Spanish smoked paprika ("pimenton"). Add a bit of salt if desired.

Toss potatoes and onion in this mixture until thoroughly mixed.

Put in lightly oiled glass baking dish or cast iron frying pan; bake in oven at 400 for about 45-55 minutes, until potatoes are done to taste.
